For those who may wonder, it cannot be uninstalled from the Store itself (nice move, Microsoft), but can be safely uninstalled by right clicking the Notepad icon in the main Wndows menu, and selecting 'Uninstall' from the pop-up menu.
After that, Notepad Replacer has to be reinstalled and it works as expected.
Do NOT click on the Install button on the classic Notepad's banner at the top. If you re-run the Notepad Replacer installer, does that make any difference?

Also check the Windows Store to make sure that you don't have Notepad installed from there.
